The 1800 Margarita Raspberry is the best drink I have ever consumed. Period.

This is a delicious margarita with a little kick. It was one of my favorite drinks I had on a trip to Mexico City. It has a perfect balance of acidity, sweetness and alcohol that brings out the flavour of the tequila really well. The juice from the margarita mix helps to bring all the flavours together and tastes great when combined with the raspberry puree.

I first head about this recipe in a Texas Cooking Class I attended at the San Antonio School of Cooking. We were making fajitas and learning how to make fresh tortillas when the instructor mentioned there was another food that needed just a bit more time on the stove before it was ready for us to eat. It was this recipe for Raspberries, Triple Sec and Tequila over Ice that my fellow student, Veronica Rodriguez made.

This one is for the margarita lovers!! On my recent trip to Mexico I got to enjoy a lot of good food.. and drinks of course. The food was delicious but all I could think about were the margaritas.

I’m not sure what’s happening in OKC but it is day 3 in a row of 80º weather which is odd for January. January isn’t typically the time for me to get in my kitchen and start whipping up margarita’s but I’m making an exception for this weekend.

I can always find a good excuse to make some more raspberry margaritas, but with my better half getting ready to deliver our second baby very soon I’ve been forced into limbo. No more margaritas for me, but that didn’t stop me from making some anyway for my wife who probably doesn’t even like them. This is a great way to workout your problem-solving skills while also keeping a delicious cocktail nearby.

These are so tasty, and hit the spot on a lazy summer night. I made a large pitcher to share with my family. You could easily make these in batches and save in the freezer for a party, or make them all and have a margarita party:-) I used El Patron Reposado Tequila (cheers to +1ing your cocktails).
